I was going to save this for a rainy day, but since you asked.. :)

The Help included with cold fusion studio includes a full chapter on working
with arrays.  See Advanced Cold Fusion Development -> Chapter 5: Working
with Arrays. I think it's exactly what you're looking for.  

You can get the help files for free, even if you decide not to keep Cold
Fusion Studio, as they are in HTML format.  See the tip below for info on
obtaining a free trial of CF Studio.

Software:
I've said it before, and I can't stress it enough - Cold Fusion Studio is
ESSENTIAL for anyone developing in Cold Fusion.  Not only does it include
on-the-fly tag insight (hints while you code? you bet!), it also includes
TONS of searchable help.  AND you can download a trial for free at:

With features too numerous to list here, it's invaluable not only as a Cold
Fusion authoring tool, but also the single BEST tool for working with HTML
(IMHO).

Books: 
Cold Fusion Web Application Construction Kit, and Advanced Cold Fusion
Development, both by Ben Forta, are available at just about any major
bookstore, and on-line at:

I highly recommend these two books to anyone using Cold Fusion.  They are
well written and full of examples you can test with.
