Whoops, I forgot to mention that the advice I've heard the most was to use these
rates times however long you think it will take to do it (either apply padding
to the time or multiple your product by 1.5  or 2), then bid out the straight
job. So, you write into the contracts what the conditions are, like "I'll give
you three design options, you pick the one you like, with one revision of that."
If the job goes beyond these boundaries, then you start charging by the hour.
Same thing for maintenance; give them a long-term deal, like $50/month buys them
an hour and a half of admin, update, etc., every month, and beyond that, you
charge by the hour specifically for the task you're working on.

Caveat: I'm no expert on this by any means, but, again, this was advice that
I've gotten. Take it with a grain of salt.
