Maybe you're forgetting the point of the Mac UI.  (intuitive simplicity.)

But seriously, I will admit (having used Macs for a time and then not 
using any computer at all for a few years) that newer Mac OS's are 
more complex.  There are a lot of web resources, but if you are on a 
modem connection like me,  and suddenly can't remember the key combo 
to get a screenshot, I recommend the latest edition of

The Macintosh Bible.

It's a book. It comes in handy.
