I'm sure it's been said before, but it's always good to be reminded.

Document and archive everything pertinent to a project, even when it 
doesn't seem too pertinent. Always have solid evidence of any 
decisions/discussions that have taken place, especially when working with 
seedy clients.

One method I've used in the past is a "log" email address, which is just 
storage address created for a project, something along the lines of 
projectname-log at somewhere.com and make it a standard practice to CC any 
correspondence, either internal or external, to this address.
