Agreed. My own site has a liquid outer design but the text inside that
design is limited to a 500 pixel area so while the entire design can expand
to fill the entire browser my text never strays past a readable limit.

And just because some instances of a design technique or not adequately
implemented doesn't mean that the technique as a whole is flawed.
