I can think of two situations.
One - where you've got a logo which utilises a specific, non-standard font.
And where you need a piece of text to fit an exact space, either in terms 
of the size of the letters themselves, or spacing, etc.

Any time you do decide to replace text with graphical text, use the ALT tag 
wisely.
