one technique that i've used... when i want a symmetrical shape, i 
draw a line depicting the axis of the shape... from there i create 
grid lines (not a full grid) so that each point on the grid matches up 
to handles and points on the curves... i duplicate and mirror that 
grid to the other side of the axis, and move the analogous points 
and handles into their respective spots on the now-mirrored grid...

probably an easier way to do it, but it works...

if you want some examples, let me know off-list... ascii art 
representations of what i mean won't work, and i'm not gonna send 
any attachments to the list...
