Martin,

So what would your average freelance programmer need to keep their butt
covered when developing any type of e-commerce site? I don't want to be
carrying liability insurance for the rest of my life, worrying about a
dozen e-commerce sites that I've developed that one day may be somehow
hacked. Are there any books about this you can recommend?

You may not have ultimate liability, but you're still liable along the
way.

The merchant as a contract with you to implement this, therefore you're
liable. The important thing is to ensure that the liability is passed on
for everything except where you directly screw up.
