how you do it will depend on a couple of factors:

1)  whether you need to query the data back out
    or not

2)  the operating system the cf server is on

3)  whether you can install custom tags, cfx tags,
    com objects, java classes, etc.

4)  whether or not writing the data to a text
    file in a format that can be used by excel
    is sufficient.

have you tried a search on allaire's developer exchange for solutions
related to excel files?

some ideas.
