Most search engines include the keywords as part of their URL when you
do a search. When someone clicks the URL to your site their browser
sends you the search engine URL. Site stats products like Web Trends
should collect and collate those referrers for you.

It would take some work to build your own as just about every search
engine names that field differently. It is possible.
