i'd start off with HTML 4.01...

since XHTML is just a reformulation of HTML 4.01 as XML, you'll have the
same tags and similar syntax...

then you can have a section for each tag and overall overview section that
details the differences between HTML4 and XHTML1...

since it comes down to case, attributes, and closing, it should be pretty easy
to provide help on the conversion...
