Photoshop actions and batch process.

Presuming the thumbnails will all be the same
size. Create a new action in PS, record your
manual resize of one of the images and save for web
if thats the final destination. Stop recording. Go to
file >> automate >> batch.  Choose the action
just recorded, the source folder containing the
original full size images, and an ouput folder for
the thumbnails. Simple =8-)

As for the intial screen grab I'm afraid I don't know
of an easy way round that. You may just have to bite
the bullet and go grab each site in turn. Although if
the screen grab is the same apart from the different site,
that is you have your browser window fully open, showing
only the site on your monitor. Once grabbed you can go
through the same process as above. Set up an action to
cut the site out of each grab and save. The initial grabs
must be exactly the same apart from the site, to be able
to automate and get predictable results.
