One approach you could take is Use Cases:

Flowchart it even if it's not - you will save *buckets* of time explaining
it to other people.

Remember that the front-end bit is only the tip of the iceberg - what's
happening behind the scenes as well? (hints - payment processing,
stock status checks, order status checks, data export to fulfilment etc)
