Entourage does not cache deleted emails, but it will not automatically
recover the hard drive space it has held for those emails. Because
everything is stored in a single file, Entourage will keep any space it has
claimed and re-use it rather than releasing and claiming space as needed.

In order to reclaim the unused space (and also better optimize the usage of
used space), you need to rebuild your database. Hold down your 'option' key
while opening the program and you'll get a window offering the option of
either a 'Typical' or 'Advanced' rebuild.

Note that if you haven't done this before and you have a really large (over
200MB) file, this  might take a good while. Doing this regularly will make
the program faster and will also keep your database size down.
