simple - you can't. Homesite has no support for unicode.
try ultraedit (Windows), BBEdit (Mac), vim or (x)emacs (linux) they
have unicode support built in = can create chinese files.
Graphical editors are not my resort, but Mozillas "composer" can
create unicode html files for sure.
