The mime-type text/html has not been registered for use with xhtml 1.1, only
sgml-based html and xhtml 1.0 following appendix c of the xhtml 1.0
recommendation.

Technically speaking, you are misusing the text/html mimetype if you serve
xhtml 1.1 documents in this way.  However, the appropriate mime-type,
application/xhtml+xml is not recognised by very many browsers, and you are
usually prompted to save the document instead of having it displayed as
html.

In practise however, I haven't noticed any problems with serving xhtml 1.1
as text/html.
