i dont think you'll find documentation to hand hold
you thru your particular setup.

but as long as you have access to online docs you can
work thru with them and apply what you learn to make a
server.

I have a similar setup as you, Compaq PII 350mhz & had
very little knowledge.

Started with a stock redhat 8.0 install. Chose apache,
postgres, php, perl, mod_perl, samba, cvs . Did not
worry about X since i never planned to use it as a
desktop.

Then it was learn how to use vi, hit the online docs
(google, groups.google) and stumble thru each of the
components sequentially.
