There is a ton of image management software. Some of it may have come 
bundled with your camera. On the high end, there is stuff like Cumulus 
(was mentioned on theList a little while back). For Windows & Mac, 
there are lots of options.

Adobe released a new app for Windows called Photoshop Album 
(http://www.adobe.com/products/photoshopalbum/overview.html) which 
looks really good.

On the Mac, there's iPhoto. Which lets you archive to CD *or* DVD 
directly from within the program. And will load the CD/DVD in your 
original organization when you pop it back into the machine later.
