Would they ask a catalogue designer to make a video, to show how the 
catalogue concept works?  This is a digital environment and clients who 
insist on paper or projected presentations to explain the concept of a 
website design should be prepared to accept that they won't be able to 
appreciate the sites' design or interactive features.  Then again, most 
people who ask for a paper portfolio are only likely to be interested 
in general concepts and pretty screenshots anyway.

The best way of handling offline presentations - if you have the 
resources - is to use a laptop.  That way, you can pre-prepare your 
presentation to an optimal level and you'll know that everything will 
perform just as you want it to.  I did a presentation once using a 
couple of sites burned onto a CD-R and, on arrival, was presented with 
an old PC running IE4.  The demo site worked, as I'd developed the 
sites used in the demo with all browsers in mind, but it didn't look 
half as good as if I'd taken a Powerbook running Safari.
