For english speaking, US audiences, should i use UTF-8 or ISO-8859-1 as the 
charset of an xhtml document? Also anyone know what would be a good one to 
use for spanish speaking audiences?

Of the sites that are standards advocates, I noticed that w3c.org and 
stopdesign.com use utf-8, while zeldman.com, meyerweb.com and 
csszengarden.com use iISO-8859-1

What is the ramifications of using one over the other?
