Ruby tutorials:
http://www.math.umd.edu/%7Edcarrera/ruby/0.3/ (basic)
http://www.poignantguide.net/ruby/ (funny, different and good)

A lot of Ruby documentation in general:
http://ruby-doc.org/

Two nice tutorials on Rails (although with a couple of bugs):
http://www.onlamp.com/pub/a/onlamp/2005/01/20/rails.html
http://www.onlamp.com/pub/a/onlamp/2005/03/03/rails.html

But if you really want to learn Ruby I recommend the Pickaxe book:

http://www.rubycentral.com/book/

The free web version doesn't cover the latest version of Ruby but it's
still correct. It just doesn't cover some newer features.

ps. Learn how to use blocks/closures. They are your best friend. Really!
