A free option is http://www.irfanview.com which has a capture menu
(press c) that allows you to either take a screenshot every x
milliseconds or when you hit a predefined key sequence. It also
includes the mouse and allows to choose screen, window, or window
client area.

For real easy screencasts, I normally use Techsmith's Camtasia
