Actually, I'd suggest a Macbook Pro, with a copy of XP/Vista (and  
Ubuntu) via VMWare. Covered on all fronts then.

Having seen a bunch of devs on our project (Java from Flex UI to deep,  
deep services) using them in that way, it's one smoking dev platform.
