this is the main number one reason why i don't go to restaurants
steak should be bloody but hot
bloody means don't apply so much heat that the inside turns grey (well
done), and hot means apply enough heat to reach the middle
a very very difficult piece of timing
there's only one way to ensure this, and that is to grill it quickly and
then begin eating it within approx thirty seconds after removing it from the
grill
if it sits under a heat lamp waiting for the friggin carrots for even a
minute, it's too late
how many restaurants will serve the various diners at a table their entrees
at different times? nope, they bring everything at once, it's a social
thing
the steak, being the quickest to prepare (except, i guess, for soup, which i
imagine is simmering away in a large crock somewhere) is always already no
longer hot enough by the time it arrives
and you cannot say "please take this back, it's no longer hot enough"
because then they microwave it, and spit on it for good luck
i hate restaurants
