[thechat] Recipe: Gingery Chicken Sweet Corn Soup

Hi Madhu,

I made your Gingery Chicken Sweet Corn Soup for dinner last night. It was
fabulous. I had a couple of questions and comments.

I used regular old salty stock... but I did attempt to get Chinese stuff and
couldn't decide what I should get. There are about 20 different kinds of
stock at my grocery store - the closest I could find were Chinese Won Ton
soup base. Japanese clear soup broth and "A Taste of Thai" Tom Ka soup base
(but I think that's just Tom Ka flavouring). Would any of these have worked?
Some day, I'll get around to making my own stock - but not today ;-).

There were a couple of changes I made to the recipe... some of them might
make it easier for people who don't stock Asian food bits in their kitchen.

*I freeze fresh ginger in my freezer. I don't use it often enough to keep it
fresh, so I throw it in the freezer. When I need to use it I cut off the
skin and dry bits and let it warm up a bit before throwing it in the recipe.
It's better than dried ginger powder, but not as good as really fresh
ginger.

*I didn't have any rice wine (for some reason I thought the recipe called
for rice wine vinegar - which I *do* have), so I used old white wine that I
use for cooking instead.

*I added about a tablespoon of Thai sweet red chili sauce instead of
tobasco. Makes it a very little bit spicy, but also keeps the sweet flavour.
You can buy it in the grocery store (at least you can here - your mileage
may vary) and keep it in your fridge for a very long time. Adds an extra
zing to lots of Thai food.

*I used lots of spring onions - because I like them - about triple what
Madhu called for - but the soup still tasted yummy. Of course, our spring
onions in Canada may be smaller than yours in India. I used about 3/4 cup of
chopped spring onions for a doubled recipe.

*I diced and added a small fresh tomato a couple of minutes before the end.
when I was in Thailand I noticed they often add tomato, and I had tomatoes,
so I added one. It was good.

My husband and I both loved the soup. Actually, he *raved* about it. It was
super quick to prepare. Thanks Madhu. I'll try another one of your recipes
soon and let you know how it turned out.
