   I agree that *boiled* carrots are quite nasty, but all cooking
methods are not equal.  Putting the carrots in with a pot roast makes
them soft and caramelized not like the nasty no flavor mush you get when
you boiled them down.  I find it works best if you use large carrot
chunks, say 2 inches long.  Helps keep them firm.

Soggy broccoli is pretty nasty.  I find overcooked squash to be worse
though.  Squash releases so much water on its own that it is really easy
to make it end up water logged.  Broccoli you at least have to work at.
