=> So, what should I do with this beast? I have onions, celery and
=> potatoes. Do I just throw everything in all at once and cook it at
=> about 300 degrees all day? As I cook for one, I got the smallest one
=> they had: 2 lbs.

If you have a crock pot, it goes a little something like this:

- Cut up a large onion.
- Add 1 can of beef broth.
- Cut up 1 lb. of carrots into 2 in. pieces.
- Cut up 4 or 5 potatoes
- Brown pot roast in a pan on top of the stove.
- Add vegetables to bottom of crock pot.
- Brown pot roast in a pan on top of the stove.
- Top with roast and pour beef broth over it.
- Salt and pepper to taste.
- Cook for 8 hours on low in a crock pot until the meat starts falling
apart. (although a 2 lb. roast may not need to cook quite that long so keep
an eye on it.)

This is the way we've done it for years in my family and it's always
fantasmagorical! There's some good recipes out there, but the really good
ones will at the very least have onion, carrots, and potatoes.

Bon Appetit!

Alan
