As we don't have a registered office address or lawyers (afaik),
it's going to have to be an individual's address  until such time as
we have one or other of those.

I think the individual should be whoever is the admin contact,
but with a clear recognition that their address is used by virtue of
their role (ie they have been explicitly delegated the task by
evolt.org), not because it's their property by right. When the
person in the role changes, so does the contact info.

That way there's no arguments about who owns the domain -
evolt.org does, and no-one can claim otherwise.
