multiple pages... depending on the form, i group elements together 
on pages, and try to make it only a couple screen's worth of 
information... i also pass the data as hidden fields so if there's a 
bad connection or the user walks away for a few he/she can pick 
right up (since a session might expire in the meantime, but hidden 
fields won't)... and finally, i let the user know in advance how many 
pages there are, where he/she is in the process, and try to make 
all pages the same length or shorter than the first form page...
