Tex-Edit Plus is a simple fifteen dollar piece of shareware, and is kind of
like BBEdit without the HTML/programming emphasis. It's very
applescriptable. It has basic layout abilities: http://www.nearside.com/

Nisus Writer gives you at least as much control as microsoft word, and
imbibes of the same design philosophy as BBEdit (command keys for
everything, advanced search and replace, and other genuinely useful things).
An older version is available for free at http://www.nisus.com, and I hear a
new version is due at macworld next week.
