For holidays, it's better to use the 'Disable Mail Delivery' option. However, one problem I've had before is that I've used a different address to attempt to unsubscribe (like many people, I have home & work email, and a few other addresses knocking about). Check that the address you use to unsub is identical to the one which you receive thelist on.
