In fact, there's substantial requirements to have long, legal stuff -
in most jurisdictions, there's a requirement to have standard disclaimers,
place of business etc on all stationery, and there's no opt-out for email.

Of course, if the email isn't being sent as a business correspondance
of your employer, there isn't as much need of this, but in that case, the
email needs to specify that, despite being sent from your work email
address, the email isn't from your employer, but from you as a private
individual.

Yes, a certain amount of internet practise suggests that a sig is just
a return address, but legality takes precedence. Some lawyers do
take this to extremes to be cautious and avoid risk, but that's what
you pay lawyers for - making sure you don't get sued.
