Yes.  In practice, I've not seen any issues with serving xhtml 1.1 as
text/html, however the mime-type is not registered for this type of
document.

The document you are reading is not endorsed by the w3c, it's simply a note
by one of it's members, albeit backed up by the rfcs registering the
relevent mime-types.

Also, be aware that simply serving xhtml 1.0 is not enough to qualify for
text/html status; it also has to follow appendix c of the xhtml 1.0
recommendation.
