Because em and % size the fonts relatively to the user's preferred font
size. It is true that many browsers (but not all!) are able to scale px
fonts, but this has to be done after the page is loaded, and in some
browsers this involves digging deep in the browser's menu structure. By
using em or % you have the right font size from the start.
