If you just want to change the startup type of a service (eg to manual, or
disabled), then John's advice is correct.

If you actually want to remove a service from the list displayed in the
Services MMC Snapin (eg as preparation for removing/uninstalling the
executable), they are stored in the registry under
HKLM\System\CurrentControlSet\Services\

Make sure you know what you're doing before you uninstall a service.
