You can look in the headers for things like these:
X-MimeOLE: Produced By Microsoft Exchange V6.0.6249.0
X-Mailer: QUALCOMM Windows Eudora Version 6.0.0.22
However X- headers are easily altered in the majority of mail components so it's not a problem to spoof another mail program.
