On the Mac OSX ... Using BBEdit works, but works even better with 
Interarchy.
with the newest version of interarchy you can even drag entire sites 
from one server
to the other. If there is an existing file you are editing in bbedit 
that was manually
downloaded from interarchy, Command+Save puts it up after editing.

Very simple, no bells and whistles.
