I've found lists of default fonts in the past, and probably still 
have some links somewhere. So far I've found just one, for Windows:
http://www.kayskreations.net/fonts/fonttb.html

A bigger concern: Default fonts are not necessarily active, even if 
they're installed. Some of us use a font management utility and keep 
only a small number of our installed fonts active at any one time. 
Others, who don't appreciate long lists of fonts, have manually added 
and subtracted and weeded their font collection. E.g., some of my 
clients, who are not very computer-savvy, have asked their tech 
support people to reduce their list of fonts to a chosen few. These 
clients would have no idea how to get any of those fonts back if they 
were needed. And my partner, a database programmer who spends a lot 
of time surfing the Web, doesn't have several of the Windows XP 
default fonts on his XP machine.

So definitely use CSS to make sure the pages degrade, but it won't be 
only on older machines.
