Tech. Using the same client: opening it from my server, it displays
nothing until the entire pdf downloads; from the Crystal Tech server, it
displays the first page when it's available, then displays the rest as
they download.

I'm using Reader 6.0, so YMMV with this, but look in Edit>Preferences for the Internet settings. Within that, you should have "Allow fast web view" and "Allow speculative downloading in the background" checked. I don't believe this is server-specific, but I could be mistaken.
