Actually, both of these products run on a host operating system

ESX Server runs a monolithic kernel and hypervisor on bare metal - VMWare Server does not.

In terms of VMWare Workstation -vs- VMWare Server products - the latter is geared towards server scenarios. Lights off management, and servers that are always on. You can't do things like "drag and drop" files into the VM, but you can manage remote VMWare Servers using VMWare's centralised console tools.
