Totally depends on what you're doing. One of the best ways to get curves
it to use circles and ovals as generated by the circle tool, and use the
razor tool to cut away what I don't need.

((normally I wouldn't answer a question like this - but I was up till
2am last night in Illustrator doing stuff like this:

circles and the "divide" filter to get the curves I want.))

Thinking out loud, to make a "7" with a really sexy curve, I might use
an oval to describe the negative space to the right of the 7 to get the
pieces and parts.

As an example, makes some overlapping circles, select them all, then do
"divide", then "ungroup" - then you will have lots of "shards" of things
with very smooth curves.

Does that make sense?
