I'm not sure what the prevailing technique would be, I think what is most
important is that the font sizing be relative so that users can adjust the
size within their browsers. I've just changed my own site over to
percentages i.e font-size : 75% or whatever.

As far as using xhtml or html, whichever you decide, make sure to follow
your doc type I would assume. Again, I'm new to all of this.

Concerning the "tom's" thing, maybe you have your email client set to html.
If so I apologize for the confusion. There is a character entity for single
quotes. It is ' so in other words you would have Tom followed by '
followed by s = Tom's.
