Zoom Text is the most commonly used magnification http://www.aisquared.com/

It blows up the screen as well as has a high contrast square that you can
mouse over text and objects.

Have you tried Opera?  Its email client isn't perfect,
but like the browser itself, it can zoom up to 1000%
easily.  Though, it won't help much for other software
that she needs to read...
