In addition to what Sarah said, there's a custom tag out there (on MM
exchange...hopefully?) that uses DHTML to create the upload fields. Click a
button a new field appears for a file to be loaded into.

Re the server side of things, at least with CF 5 you'll need to loop through
the various file upload fields as opposed to processing fields 1 through X
in order.
