It's called "masquerading" in Postfix, a drop-in secure replacement
for sendmail. (Recent RedHats give you the ability to pick Postfix
or sendmail as your mail server using a graphical tool; it's that
simple.)

You will just change a line in the /etc/postfix/main.cf to tell it
that all outgoing mail should show as coming from 'domain' rather
than 'server.domain' -- there are comments inline that explain it
all.  MUCH more human-friendly than sendmail configuration.
