In MX "Code Rewriting" is under Edit | Preferences.

For those that write valid XHTML Dreamweaver can be a huge timesaver in
regards to SGML characters. Dreamweaver will replace all of the non-SGML
characters with their appropriate entities upon paste/authoring in the
WYSIWYG. Now, it would be really cool if it would do this when you paste
content into into code view.

There are ways to turn that off. I am not near my computer right now

do anything odd to my code.
