I don't know if my experiences are typical, but I have been presented
with the following documents in the following order when commencing work
for a client:

1. Meet with potential client for preliminary discussions - sign
non-disclosure agreement.

2. Agree terms with client - sign contract incorporating work for hire
agreement.

I have never (and would never) sign a non-compete agreement on a work
for hire, although I have signed non-compete agreements with the
majority of permanent jobs that I have had.

IANAL, YMMV, HTH and HAND :)
