I think it works because my browser, by default, uses UTF-8. I guess
not all browsers will be doing this by default so therefore you have to 
tell them what to use?

I thought there was more to it than that.  Maybe as you're keeping the
data 
separate (ie you don't have a page with Eglish and Japanese) you won't
need 
to play around with collations.

Is that cross-browser?  You shouldn't be able to display japanes
characters 
with a Latin charset.
