I'm a big fan of this one: Ecrion XF Rendering Server 2007 http://www.ecrion.com/Products/XFRenderingServer/Overview.aspx Using XML and XSL you can create some pretty impressive PDF Documents. I was pulling data from a database, merging that with an XSL template to create FO-XML and passing that to the Rendering Server.
