Now just imagine what you'd have to go through if you have/want to
reinstall the operating system from scratch.
Definitely one partition for data would be very interesting.
Windows Server 2003 requires ~3GB max. So, let's say 100GB for itself
would be pretty good (so you can still install lots of stuff).
